Alati Restaurant
Alati restaurant is located within a 400-year-old winery, the original canava that marked the beginning of Vedema, a Luxury Collection Resort. Canava, a word unique to Santorini, describes the underground cave formation once used to produce and store wine. The entire cave has been kept as it was centuries ago, completed only by candles, safeguarding a unique and timeless
patina.
The extraordinary experience of dining in a centuries-old winery, is met with the fascinating al fresco proposition at the restaurant’s upper terrace. A completely different sentiment is created upon ascending on top of the canava: You can almost reach out and touch the distinctive bell tower and blue dome of the Megalohori village church. The starlit night sky washes over the emerald vineyards and the medieval village views gently frame the resort. Everything here is quintessentially Greek, from the restaurant’s name, Alati, which translates to salt, to the beautifully orchestrated menu, creatively celebrating the gastronomic culture of Greece.
The recipes attentively passed down from one generation to the next, carrying the flavor of love for authenticity, create the backbone of the Alati philosophy. Heartwarming and delectable, the luscious “Bourdeto” fish soup or “Artichokes ala Polita” evoke a link to the country’s tradition, embodied in the fresh, seasonal treasures found on the island, as well as the Aegean Sea. With dishes that have kept their original names, honoring their culinary history from a Greek mother’s kitchen to an elevated epicurean incarnation, Alati is a curation of tastes and textures that inspire guests to embark on a refined adventure of genuine memories, transcending time.
