Within the stone-carved embrace of Vedema’s historic winery cave, Executive Chef Rafail Tsakiris presents a five-stage culinary journey that reimagines lobster with elegance and versatility.

The menu begins with delicate tartare layered with pear and cucumber, followed by a velouté infused with Metaxa 12, Greece’s signature brandy-like spirit, and a refreshing lobster salad accented with yuzu and Greek caviar. Grilled lobster finished in lemon and thyme butter celebrates the flavors of the Aegean, concluding with a luminous white chocolate and yuzu mousse. A curated wine pairing is available to complement each stage of this exquisite experience.
